Waxes and coatings can have very different levels of water repellency, a.k.a. hydrophobicity.

Water glides off and drains smoothly.

Water remains on the surface like a film.

Mineral deposits and water spots

When rainwater or tapwater evaporate from the surface, the contaminants and minerals dissolved are left behind, forming a mineral deposit. Water spots are actually damage caused to the surface as droplets act to magnify the light of the sun, causing permanent damage. This is why it is so important to always dry the vehicle properly.
